Aebleskiver

As anyone who has ever talked to me, you know my husband is from Denmark. He’s tried really hard to adapt to all the American foods I’ve served him. Once in awhile I want some of his food culture, too. He has been promising to make aebleskivers for me the last 10 years and today he finally did it !!!!

When looking at the the photos remember my kitchen was clean when he started. (Just saying)

The recipe is easy and they are fun to make. But it did take some time to cook all of them

Learning to flip each one was a little frustrating. some came out lop sided.

I thought we should include the gnomes in our “feast” I had 3 differnt kinds of jams to dip them in. They tasted a little like a teeny, fluffy pancakes to me. We ate way too many of them.

To make, first you need an aebleskiver pan.

Mix 2 cups of all purpose flour, 1 teaspoon baking soda, 1/2 teaspoon of salt, 1 heaping tablespoon of sugar. After these are mixed add 2 eggs and 2 cups of buttermilk. Wisk together . Heat pan until butter will bubble up, fill indentions 2/3 full. Cook 3 minites per side. This I found hard to know when to flip the aebleskiver. But trial and error worked ! Sprinkle with powdered sugar.

Dinner will be a little late tonight….I’m full !!!
